gluten-free pizza in Canada

Tonight Scott and I went out for pizza. Much to my delight, humble Pizza-Pizza had gluten-free pizza dough!

My first "generic pizza chain" pizza in thirteen years, I figure. And it was delicious.

Being unable to eat wheat used to confine my diet enormously. Now there are gluten-free products all over the place, it's really astonishing. I guess the increasing incidence of intolerance to the gluten protein is starting to sink through to the marketing people.

(PS I will add that I've heard that it's not so much the gluten itself that is causing the intolerance, it's the processing through which our wheat is subjected that causes a reaction in people. I've heard that supposed celiacs in North America are able to tolerate wheat products produced in markets like Asia etc where there is less processing. I'm tempted to believe it.)
